10-Minute Asian Cucumber Salad

Equipment

  • Peeler
  • Chopping knife and board
  • Sealable jar
  • Plate

Ingredients
  

  • 1 Cucumber
  • ½ Red onion
  • 3 tbsp Toasted sesame oil
  • 2 tbsp Mirin alternatively honey / agave syrup
  • 2 tbsp Rice vinegar
  • 1 tbsp Light miso paste
  • Sesame seeds / chili flakes / furikake optional toppings

Instructions
 

  • Vegetables:
    Wash the cucumber and shave it into strips using a peeler.
    Halve the red onion, set aside one half, peel the other half, slice it into fine rings, and soak it in lukewarm water. This will mellow their flavor... #destinkify
  • Dressing:
    Combine remaining ingredients, except for the optional toppings, for the dressing in a sealable jar, and mix vigorously until an even emulsion is formed.
    Season to taste.
  • Plating:
    Arrange the cucumber strips with the drained and patted dry onions on a plate, generously coat with the dressing.
    And you're done!
    For those who feel like it: Top with your favorite topping! I went for sesame seeds and some spicy furikake, but I'll leave that completely up to you!
